This year’s Canada Day celebration is like Canada: it’s awesome and enormous! So huge that one country can’t contain it, so think of this as an early Fourth of July celebration AND a late Cinco de Mayo party, too! I told my crew they could create anything as long as it was delicious, and they turned out so many amazing, over-the-top dishes that this menu has become truly EPIC.

FIRST COURSE

Mashed Potato Waffle Sticks
Stuffed with mozzarella cheese and topped with seaweed caviar, crème fraîche, and chives.
